Every few years, I used to go down the "I wonder what else is out there that's better than MSFS" tangent. My particular favourite was Terminal Reality Fly!, simply for it's procedural detail. You actually had to read the manual in order to get an aircraft starting, and it took about half an hour the first time you tried it.
Sadly, the conclusion I eventually came to was that unless you're prepared to stare out into space at a blank land form, there's nothing quite like MSFS, simply because with popularity comes add-ons. Not many developers will write add-ons for a simulator that isn't the most popular. The only exception to this is X-plane, which has been gathering momentum for the last few years.
Having said all this, I'm always on the lookout for what else is out there. Flightgear seems to be the classic open source project in that development has been so slow that it looks out of date before it's even finished. I also never had any joy getting a remotely bearable frame rate for some reason.
