Try the nVidia tool "hNancer" - it explains the various settings - and allows you to store profiles.

Have you got "anisotrophic filtering" set to ON? I have mine set to tri-linear. If I turn it right off then *everything* shimmers ;-)
That's a setting in FS (display) - though I think you can change the quality/amount in nHancer as well.

I think FSX leaks like a sieve, so these "features" (bugs in my language) sometimes build up with time. A reboot cures it. I have 4GB RAM and a 512Mb 8800 GTS .... grrrrrrr! Personally, I also blame VISTA - which just eats hardware even when it's just sat there doing nothing.
