Touchbuddy sounds fascinating. I think it would work best in a high-workload sim where someone is trying to kill you.
FS2004 aims to be more of a realistic simulator so I fly VC and mouse the "real" controls.
Still, to have a little touchscreen instead of a keyboard sounds intriguing. You could even create a "virtual touchscreen" using the second monitor.
