Um, when I had to set up my computer I actually had to go into the settings on the screen its self (should be a few buttons on the front) and change the resolution there. Then change the resolution in FS/your desktop settings.

have you changed your resolution in the fsx settings to a widescreen one?

Your new monitor should have a 'native resolution' -- here are some of the common native resolutions found in LCD monitors:
* 14-15": 1024x768 (XGA)
* 17-19": 1280x1024 (SXGA)
* 20"+: 1600x1200 (UXGA)
* 17" (Widescreen): 1280x800
* 19" (Widescreen): 1440x900
* 22" (Widescreen): 1680x1050
* 23" (Widescreen): 2048x1152
* 24" (Widescreen): 1920x1200
* 30" (Widescreen): 2560x1600
You will get a better image if you use the native resolution. Plus, anything other that a 'widescreen' resolution means that a 'normal' image needs to stretch to reach the edges a widescreen adds more pixels to the sides. This is why you are seeing a stretched image.
If your system can't cope with the native resolution, then you can choose a lower resolution, but choose one which is close t a 'widescreen' format to prevent stretching.
