For payware, I'd take a look at all the Alphasim aircraft - I think many of the older ones have now been released for free. Other than that, you may need to trawl Flightsim.com!

But, obviously, you'd want to start here

The KBT F-18 Super Hornet (on Avsim) is also quite good - the best freeware modern fighter IMO...but nothing beats the Sabre
