Looks like you did the right thing. The change is more noticable in the mountains, the area directly around Rotorua is too flat to notice this change. You should see a difference at the volcanoes to the east, but much more on the SI.
The ridgelines around airports are a pain and due to MS' wisdom to make airports flat. The 20m mesh makes the terrain accurate and most airports are sloped, so you get little fake plateaus and airports digging into the terrain. This isn't dramatic, but leads to this small but annoying effect. Airports need to be flat in FS otherwise the AI won't work. Scenery designers rallied MS to change this for FSX, but they didn't. So unfortunately we have to live with this.
The bridge effect is another limitation in the FS engine. If you want to get rid of the bridges, delete the br*.bgl files in the topo folder.
