one thing that is annoying are roads and rail that cut through buildings and factories, roads are important for visual navigation as it makes it easier to identify towns.

This is really just the way 'default' MSFS simulators work, they have a set of landclass textures which include photos of city buildings, homes etc covered in autogen buildings and trees, plus photos of roads, and then vector roads -- normally based on real data -- are added over the top if you are lucky. So the vectors have no way of knowing what landclass textures are underneath, and they'll run through anything in the landclass photo texture.
Only real way to fix it is to use photoscenery, as this covers all landclass textures and vector roads. Or try X-plane 11, it deals with roads and city/town autogen differently.

Yup.
Still full of qualifications and limitations, but just gorgeous.
More specifically: ORBX Netherlands TrueEarth.
Thinking about this in NZ makes my teeth itch.

It's a terrible affliction it is true... but it's not a dentist that will fix this problem
At some point someone will crack under the pressure and let fly with NZ coverage in Aerofly.

It looks pretty enough but I’m afraid that I can’t get behind Aerofly yet. It doesn’t simulate flight well enough for me. I’d rather have a sim that doesn’t look quite that pretty but has a better ‘feel’... but maybe that’s just me

It's a WIP certainly.
But the quality of what's been done bodes well.
Many use it as a "recreational sim" and VR is stunning in it.

Yep and maybe my opinion will change over time.... you flash people with your VR....
